Variety of olives:
Gentile di Chieti, Cucco, Leccino, Olivastra, Crognalegno and Dritta. The proportions vary from year to year according to the various collections.
Notes Olive groves:
Corresponding to about eighty different olive growers distributed between Fossacesia, Rocca San Giovanni and Mozzagrogna, with a massive prevalence of land surrounding the Abbey of San Giovanni in Venere.
It takes place in a steel tank of 30 ql each and is decanted every time it needs to be packaged.
How to use it:
It can be used raw on delicate dishes such as fish, white meats and various salads. Its delicate taste never overpowers other flavors and its roundness of taste goes well with the most diverse flavors.
